The answer to that question might be worth a whole lot more if you like fun and funky spirits. This expression of Baijiu, which undergoes an extra-long fermentation of Sorghum, produces an unaged white spirit bursting with tropical fruit flavors and the aromatic intensity of Islay Scotch or a Mosel Riesling. The nose alone will keep you coming back for more, as you discover candied pineapple, mango, guava, bubblegum, and a whiff of fresh hay. Use it in tiki drinks, or drink it neat with spicy szechuan food as a palate cleanser.
