Castell d'Age Anne Marie, Cava Reserva Brut Nature, 2021

Catalonia, Spain 2021 (750 ml)

Produced by the third generation of female winemakers, this Cava shows floral top notes, fresh cream in the middle and a sustained autolytic (think bready, nutty) bassline. The mousse is fine, well-integrated and persistent, highlighting the complexity of the wine. This wine is certified organic and biodynamic, with no intervention or additives in the winemaking. Fermentation is done with native yeast and very low amounts of sulfur are employed.
