Iron Gate's Chef Anthony Chittum has put together a cheese board featuring best in class artisanal cheeses for you to enjoy!  The cheeses this week are all from Goot Essa Dairy in Pennsylvania that began in 2001 with a group of Amish farmers.  Their goal then, as now, was to use their cheese-making expertise to provide enough extra income to keep their families on the farm. The farmers work their fields in the traditional way, with horse and manpower instead of machines, and each animal is cared for with love and the respect of nature.

-Raw Cow's Milk Cheese, aged for 60 days

-tasting notes: creamy texture, mild, buttery, slightly nutty

 

Felsa Yehr

-Raw Sheep's Milk Cheese, aged for 18 months

-tasting notes: firm texture, manchego-style, earthy, fruity

 

Der Smoked Alpen Kase

-Raw Cow's Milk Cheese, aged for 18 months

-tasting notes: firm texture, salty-sweet, slightly smoky
