The Cloister was crafted by Allagash Brewmaster Jason Perkins and Neighborhood Restaurant Group Beer Director Greg Engert as a special blend for ChurchKey’s 10th anniversary. The two ended up going with 65% fresh Allagash White, 25% Coolship beer (roughly 33 month old), and 10% Saison Gratis (Foudre-fermented saison, which provides a pop of acidity). The collaboration is meant to evoke the original, funky witbiers of yesteryear.
